• 1 lb fresh raw beets, scrubbed
  • 10 cloves of garlic, unpeeled and sqaushed
  • 1 handful of fresh marjoram or sweet oregano
  • salt and freshly ground black pepper
  • 10 tablespoons balsamic vinegar
  • 6 tablespoons extra-virgin olive oil

Preheat oven to 400F.  Tear off 5 ft of aluminum foil and fold it in half to double the thickness.  Place beets in the middle of the foil with the garlic and marjoram, season generously with salt and pepper, the fold the sides into the middle.  Add the vinegar and olive oil and scrunch foil together to seal at top.  Put on baking sheet and place in the oven and cook for about 1 hour, until tender.  Serve in the foil bag at the table.
